Strawberry & Banana Spinach Shake (TWO SERVINGS)


2 cups vanilla rice milk (I use lite vanilla soy milk to get the soy protein)

Large handful of spinach (stems and all)

6 cucumber slices (Truthfully I leave these out sometimes!)

8 strawberries (fresh or frozen)

1 or 2 bananas

1 tablespoon flax oil (I leave this out becz I dont have it)

5 ice cubes

Blend well in a blender and enjoy!

(I also add a packet of splenda becz I have a sweet tooth!)



PUMPKIN COOKIES

1 (18.25 ounce) package spice cake mix

1 (15 ounce) can solid pack pumpkin

1 t pumpkin pie spice (can substitute) 1/2 t cinnamon, and 1/8 t of each nutmeg, ground ginger, and ground cloves if you dont have pumpkin pie spice)

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. In a large bowl, stir together the cake mix and pumpkin until well blended. (I add 1/2 bag of choc chips at this point. Obvioulsy this ups the calories and sugar but it REALLY maked them good. ) Drop by rounded spoonfuls onto the prepared cookie sheet. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.



BLACK BEAN BROWNIES

1 box brownie mix

1 can black beans with liquid

1/4 cup water

Liquefy beans and water in blender and add to mix. Blend and bake per package directions. (DO NOT add eggs, oil, etc)





This one may not be be "healthy" per se but it is low cal and low fat and very good...MY KIDS LOVE IT

DIET CAKE

1 box cake mix - any flavor

1 can diet soda - any flavor

2 egg whites

Mix the dry cake mix with 10-12 oz of diet soda. (Do not use the egg or oil listed on the box). Spray a 9 x 12 cake pan (or cupcake tin) with non-stick spray and bake according to package instructions
